HONEY THYME ICE CREAM
From The New York Times
Makes about 1 quart

Ingredients:
1 cup whole milk
2 cups heavy cream
6 large sprigs fresh thyme
4 egg yolks
¾ cup honey

Can I add some beer into this to make a Beer-Honey-Thyme ice cream? 

Stephanie- old friend and botanist. If she were an ice cream what flavor would she be? Herbal, all-natural ice cream made with local ingredients; something sweet, not too sweet with a hint of savory like a honey-thyme-beer. Maybe the ice cream has with pieces of candied herb still in it that you need to pick out of your teeth with your fingers. I think about her being outside, on the top of mountains & volcanoes, feeling a connection to the earth and to the divine with a spade in one hand, a beer in the other! A cross between your gardening grandma, the sound of music soundtrack and pot-bellied guy telling stories about the good ole’ days at the bar.
